Grilling Recipes
CARNE ASADA – 25 minutes
2 boneless beef top loin (strip) steaks, cut 1” thick (1-1/4 lb)
2 tsp ground cumin
2 cloves garlic, minced
2 lime wedges
Guacamole
- Combine cumin and garlic; press onto beef steaks. Place steaks on grid over medium, ash-covered coals. Grill, uncovered, 15 to 18 minutes for medium rare to medium doneness, turning occasionally.
- Squeeze lime wedges over steaks. Carve steaks; season with salt. Serve with guacamole.
2 to 4 servings
To Broil: Place steaks on rack in broiler pan so surface of beef is 3" to 4" from heat. Broil 13 to 17 minutes for medium rare to medium doneness, turning once.
BEEF STEAK & VEGETABLES FOR TWO – 30 minutes
2 boneless beef top loin (strip) steaks, cut 1" thick (1-1/4 lb)
2 tsp olive oil
1/2 tsp dried Italian seasoning
1 each medium yellow and zucchini squash, sliced diagonally (3/4")
2 Tbsp grated Parmesan cheese
- Combine oil and seasoning; brush on squash. Sprinkle with cheese.
- Place beef steaks on grid over medium, ash-covered coals. Place squash around steaks. Grill steaks, uncovered, 15 to 18 minutes for medium rare to medium doneness, turning occasionally. Grill squash until tender, turning occasionally.
- Carve steaks; season with salt and pepper. Serve with squash.

BEEF KABOBS WITH PARMESAN ORZO – 30 minutes
1 lb boneless beef top sirloin steak, cut 1" thick
2 red or yellow bell peppers, cut into 1" pieces
1 Tbsp chopped fresh basil or 1 tsp dried basil
1 Tbsp Italian dressing
2 large cloves garlic, minced
Parmesan Orzo:
1 cup uncooked orzo pasta, cooked
2 - 3 Tbsp chopped fresh basil or parsley
2 Tbsp shredded Parmesan cheese
2 tsp olive oil
- Soak eight 8" bamboo skewers in water 10 minutes.
- Cut beef steak into 1-1/4" pieces. Toss beef and bell peppers with 1 Tbsp basil, dressing and garlic. Thread beef and peppers alternately onto skewers.
- Mix orzo ingredients in bowl; keep warm.
- Place kabobs on grid over medium, ash-covered coals. Grill, uncovered, about 9 to 11 minutes for medium rare to medium doneness, turning occasionally. Serve with orzo.
